01In a mixing bowl, combine the boiled fresh corn kernels, finely chopped onion, tomato, cucumber, and green chilli.
02Add chopped coriander leaves and a generous squeeze of lemon juice.
03Sprinkle chaat masala, roasted cumin powder, red chilli powder (if using), and salt over the mixture.
04Toss all the ingredients well to ensure they are coated with the flavours.

- 1/2 cup cucumber, finely chopped
- 1 small green chilli, finely chopped
- 2 tablespoons coriander leaves, chopped
- 1 tablespoon lemon juice
- 1 teaspoon chaat masala
- 1/2 teaspoon roasted cumin powder
- 1/4 teaspoon red chilli powder (optional)
- Salt to taste
- Sev (crispy chickpea noodles)
Just before serving, garnish the fresh corn bhel with a handful of crispy sev.
