Winter tends to test our immune system. But there’s one ancient Indian fruit that’s up for the challenge, Amla, or Indian Gooseberry. Bursting with Vitamin C (about 20 times more than an orange!), Amla strengthens your body’s natural defences, while warming spices like cinnamon, black pepper, and dry ginger keep seasonal colds at bay.

Easy Steps
01Steam the amla until soft, then remove the seeds and set aside.
02In a dry pan, roast all the spices— black pepper, cinnamon, cardamom, bay leaves, cloves, mace, fennel, and dry ginger- until fragrant.
03Let them cool, then grind into a fine powder.
04Heat 1 tbsp ghee in a pan and lightly roast the raisins until they puff up.
05Transfer the raisins and steamed amla to a blender. Blend into a smooth paste.
06In the same pan, add the remaining 1 tbsp ghee and the amla paste. Cook for a few minutes on low heat.
07Mix in jaggery and the prepared spice powder. Cook on low for 10–15 minutes, stirring frequently until the mixture thickens slightly.
08Once it cools completely, stir in honey.
09Store in an airtight glass jar or container in the freezer; it stays good for up to 6 months.

- 8 pods Cardamom
- 3 Bay Leaf
- 5 Cloves
- 2 pieces Mace
- 2 tbsp Fennel Seeds
- ½ tsp Dry Ginger Powder
- 2 tbsp Jaggery
- 2-3 tbsp Honey
- 2 tbsp Ghee
