Easy Steps

Steam the amla until soft, then remove the seeds and set aside.

In a dry pan, roast all the spices— black pepper, cinnamon, cardamom, bay leaves, cloves, mace, fennel, and dry ginger- until fragrant.

Let them cool, then grind into a fine powder.

Heat 1 tbsp ghee in a pan and lightly roast the raisins until they puff up.

Transfer the raisins and steamed amla to a blender. Blend into a smooth paste.

In the same pan, add the remaining 1 tbsp ghee and the amla paste. Cook for a few minutes on low heat.

Mix in jaggery and the prepared spice powder. Cook on low for 10–15 minutes, stirring frequently until the mixture thickens slightly.

Once it cools completely, stir in honey.

Store in an airtight glass jar or container in the freezer; it stays good for up to 6 months.

  • ½ tsp Dry Ginger Powder
  • 2 tbsp Jaggery
  • 2-3 tbsp Honey
  • 2 tbsp Ghee
