Easy Steps

Wash and peel 1 cup of lauki (bottle gourd). Cut it into small cubes. In another bowl wash and soak ¼ cup yellow moong dal for about 15–20 minutes.

In a pressure cooker or deep saucepan, add: soaked moong dal, chopped lauki, turmeric, Salt to taste and 2 ½ cups of water. If using a pressure cooker, cook for 2–3 whistles. If using a saucepan, cover and simmer for 25–30 minutes, until both dal and lauki are soft and fully cooked.

Let the mixture cool slightly. Use a hand blender or traditional blender to puree the cooked dal and lauki into a smooth soup. If needed, add a little warm water to adjust the consistency.

In a small tadka (tempering) pan, heat 1 tsp ghee. Add cumin seeds and let them crackle. Add a pinch of asafoetida (hing) for extra digestive benefits. Turn off the flame and immediately pour the tempering over the soup.

Return the blended soup with tempering to a low flame. Simmer for 2–3 minutes to allow flavours to meld. Adjust salt and pepper to taste.

Turn off the flame and add a few drops of fresh lemon juice if desired. Garnish with chopped coriander leaves and serve hot.
