- 1 cup warm water
- 3 tbsp almonds
- 2 tbsp pistachios
- 2 tbsp poppy seeds
- 1/4 cup melon seeds
- 2 tbsp rose petals
- 1 tbsp fennel seeds
- 1/4 tsp whole black pepper
- 3 to 4 green cardamoms (just seeds)
- 15 to 18 saffron strands
- 2 mangoes (pulp)
- 8 cups milk (chilled)
- 1 tbsp sabja seeds
Easy Steps
01In a bowl, soak the almonds, pistachios, poppy seeds, melon seeds, fennel seeds, rose petals, and saffron strands in 1 cup of warm water for about 30 minutes to soften them.
02After soaking, blend the soaked ingredients into a smooth paste using a blender or food processor. You may need to add a little bit of the soaking water to help with blending.
03Add the green cardamom seeds and whole black pepper to the paste, and blend again until well mixed.
04Peel and chop the mangoes. Blend the mango pieces into a smooth pulp, set aside.
05Take a large mixing bowl, combine the chilled milk and mango pulp. Stir well to mix them together.
06Add the prepared nut and spice paste to the milk and mango mixture. Mix thoroughly to ensure the ingredients are evenly distributed.
07Soak the sabja seeds in water for about 15-20 minutes. Once they swell up, add them to the mango thandai mixture.
08Refrigerate the mango thandai for about an hour to allow the flavours to blend and the drink to chill.
09Pour the chilled mango thandai into glasses and garnish with a few rose petals or a pinch of saffron if desired.
