Easy Steps

Place the cucumber slices on a paper towel. Sprinkle with kosher salt and let sit for 10 minutes to draw out moisture. Pat dry gently with another paper towel.

In a small bowl, mix together the light cream cheese, Greek yoghurt, lemon zest, and chopped chives until smooth and well combined.

Lay out the bread slices. Spread the cream cheese mixture evenly over all 8 slices. Arrange a layer of cucumber slices over 4 of them.

Top with the remaining 4 slices of bread, spread side down, to form sandwiches. Press gently. Cut each sandwich into halves or quarters (diagonally or into finger shapes) for serving.
