Easy Steps

Crack 2 whole eggs and 2 egg whites into a bowl. Whisk with salt and pepper until the mixture is slightly frothy.

In a non-stick pan, heat 1 tsp olive oil. Add ¼ cup each of mushrooms, tomato, grated lauki, and green beans. Sauté lightly for 2–3 minutes until tender but still bright.
