Easy Steps
01Preheat your oven to 400°F (200°C). Pierce the eggplants a few times with a fork to prevent them from bursting.
02Place the eggplants on a baking sheet and roast them for about 30-40 minutes, turning occasionally, until the skin is charred and the inside is soft.
03Alternatively, you can grill the eggplants over an open flame for that smoky flavour.
04Allow the eggplants to cool slightly before cutting them open and scooping out the soft flesh. Discard the skin.
05Place the eggplant flesh into a food processor or blender.
06Add the minced garlic, yoghurt, tahini, lemon juice, and salt to the eggplant mixture.
07Blend until smooth and creamy. You can adjust the texture by adding a little olive oil or water if it’s too thick.
08Transfer the baba ghanoush to a serving dish.
09Drizzle with olive oil and garnish with pomegranate seeds for a pop of colour and sweetness.
10Serve with pita bread, veggies, or as a dip with crackers. Enjoy your creamy, smoky, and flavourful baba ghanoush!
