Easy Steps
Preheat your oven to 400°F (200°C). Pierce the eggplants a few times with a fork to prevent them from bursting.
Place the eggplants on a baking sheet and roast them for about 30-40 minutes, turning occasionally, until the skin is charred and the inside is soft.
Alternatively, you can grill the eggplants over an open flame for that smoky flavour.
Allow the eggplants to cool slightly before cutting them open and scooping out the soft flesh. Discard the skin.
Place the eggplant flesh into a food processor or blender.
Add the minced garlic, yoghurt, tahini, lemon juice, and salt to the eggplant mixture.
Blend until smooth and creamy. You can adjust the texture by adding a little olive oil or water if it’s too thick.
Transfer the baba ghanoush to a serving dish.
Drizzle with olive oil and garnish with pomegranate seeds for a pop of colour and sweetness.
Serve with pita bread, veggies, or as a dip with crackers. Enjoy your creamy, smoky, and flavourful baba ghanoush!
