Easy Steps
01Cook 180g of whole wheat noodles according to the package instructions. Drain and set aside.
02In a pan, lightly saute 150g of paneer cubes in 1 tsp of sesame oil until golden. Remove and keep aside.
03In the same pan, toss in 100g of moong sprouts, ½ cup of carrots, ½ cup of bell peppers, ½ cup of mushrooms, and ½ cup of cucumber. Cook for 2–3 minutes, just enough to keep the veggies crunchy.
04In a small bowl, whisk together 2 tbsp of peanut butter and 1.5 tbsp of soy sauce. Add a splash of warm water to loosen the sauce if needed.
05Add the noodles, sauteed paneer, and chopped spring onions to the pan. Pour the sauce over and toss everything gently until well coated.
06Finish with a sprinkle of sesame seeds or crushed peanuts (optional). Serve warm.
