Rice paper wraps are so easy to make and their vibrant colours and flavours will make your mouth water for sure. We suggest you keep a packet of rice paper in your kitchen for when you are looking for a quick, tasty, and nutritious bite.
This healthy authentic recipe curated by Natasha Mehta includes corn, cabbage, red and yellow bell peppers, cucumber, and all the goodness wrapped up in a rice paper wrapper. Corn and cabbage rich in protein and fibre will definitely make your tummy happy by improving digestive health. Cucumbers in the filling double up the freshness in the dish and increase your hydration levels.
Fresh, fast and full of flavour, rice paper wraps are the perfect party or weekend snacks. Once you have the ingredients ready, it will take you just a couple of minutes to prepare them.
Ingredients for wrap:
- 1 sheet of Rice Paper Wraps
- 1 stem of Chinese Lettuce (finely chopped)
- 2-3 leaves of purple Cabbage (finely chopped)
- ¼ cup Zucchini (chopped)
- ¼ cup Bell peppers (of your choice, chopped)
- 2 stems of Baby Corn (chopped)
Ingredients for paste:
- 4 dried Kashmiri chilies (ground)
- Salt (to taste)
- 2 tbsp Sesame oil
- 2 tbsps Thai Basil Leaves (chopped)
- 2 tbsps Mushroom sauce
Preparation for paste
Step 1 :
In a pan pour in 2 Tbsps of the oil, add in blended chilies, Thai basil and salt to taste.
Step 2 :
Let it cook for 4-5 mins and set aside.
Step 3 :
Once cooled, add in the mushroom sauce to the chili sauce mixture.
Preparation for Wrap
Step 1 :
Chop all your veggies and set them aside.
Step 2 :
Using a pair of scissors, cut the rice paper sheet into half.
Step 3 :
Place the rice paper on a plate with ¼ cup water until the paper softens.
Step 4 :
Gently place one of the papers on a plate, apply some sauce and place part of the veggies in the centre.
Step 5 :
Fold the paper enveloping the veggies.
Step 6 :
In a pan add some oil, once the oil has heated, place the enveloped wrap and cook until the top and bottom are slightly golden brown.
