Quick Indian-Style Eggplant Parmesan

A trending classic food with casserole layers of eggplant and parmesan cheese is a dish that is a must-have in your recipe book if you are a food lover. Delicate slices of eggplant layered with spicy onion-tomato purée and parmesan cheese are simply irresistible. It is a simple and delicious recipe made from scratch. Ingredients list

  • Eggplant - 1
  • Onion - 1
  • Tomatoes - 4
  • Ginger-garlic paste - 1 tbsp
  • Paremsan cheese - 100g
  • Salt - As needed
  • Coriander powder - 1 tbsp
  • Red chilli powder - 1 tbsp
  • Turmeric powder - 1 tbsp
  • Cumin seeds (jeera) - 1 tbsp
  • Bay leave - 1 nos

 

Preparation

 

Step 1 :

Take parmesan cheese and add coriander powder, turmeric, red chilli powder, jeera, ginger-garlic paste, salt and coriander leaves (cilantro). Mix well and keep aside.

 

Step 2 :

Slice onion thin. Boil tomatoes, cool down and peel off the skin. Dice tomatoes finely.

 

Step 3 :

Cut globe eggplant half inch thick.

 

Step 4 :

In a pan heat oil, add sliced onion and saute for a min. Add ginger-garlic paste, diced tomatoes, coriander powder, red chilli powder, turmeric powder, salt , jeera and bay leaves. Cook well.

 

Step 5 :

Mash everything lightly. In a skillet or oven-safe container, spread a ladle of the mashed content and add one slice of eggplant. Layer it with prepared parmesan cheese mixture. Continue layering in the same process till the brim.

 

Step 6 :

Bake at 425 degrees for 20 minutes.

 

Step 7 :

Cool down for 10 minutes and serve with roti or rice.
