Easy Steps
01In a bowl mix the gram flour, lemon juice, sugar, salt and turmeric. Add the water gradually and mix into a smooth batter. Make sure the consistency of the batter is neither thick nor thin
02Add the dissolved baking powder to the batter and mix.
03Grease a steaming tin with 2 drops of oil and pour the batter into it. Steam for about 15 to 20 minutes.
04For the tadka, add oil, mustard seeds, curry leaves and red chillies in a pan. Let it splutter.
- Gram flour (besan): 1 cup
- Lemon juice:1 tbsp
- Sugar:1 tbsp
- Salt: 1 pinch
- Turmeric: 1 pinch
- Water
- Baking powder (dissolved in water): 1 tbsp
For the Tadka:
- Oil:1 tbsp
- Mustard seeds:1/2 tbsp
- Dried red chilli: 1
- Curry leaves: 7-8
Pour the tadka over the prepared dhokla.
06Cut the dhokla into small squares and serve hot with tamarind and date chutney or green chutney with chillies, mint and coriander.
