It’s summer, and the perfect time to try out some cooling desserts. Many people are under the impression that to have something delicious in front of you must mean you have to spend hours in the kitchen perfecting the dish. There are many recipes that require minutes to prepare, and are so simple that even a beginner can ace without practice!
Chef Natasha Mehta’s chocolate chia seed pudding is one such recipe. Whether you’re in a rush, or just want some cold respite from the scorching heat, this recipe is one you have to try.

With only two steps and a handful of ingredients, this pudding doesn’t require a lot of effort. Making a big patch is recommended, especially since it’s so delicious that you won’t want to stop with just one serving. While Natasha uses almond milk and almond shavings in her version, the world is your oyster when it comes to making customisations to this recipe. Coconut milk and coconut flakes are an excellent option when you want to give the pudding a creamier consistency and taste. The star ingredients of this recipe are the chia seeds, milk (of choice), and cacao powder, so make sure you use good-quality ingredients that enhance the flavour.
Chia seeds are not only great for your digestion because of the high fibre content, but your overall health as well. Ingredients list
- 60 gm Chia Seeds
- 400 ml Almond Milk (or milk of choice)
- 3 tbsp Cacao Powder
- 2 tbsp Maple syrup
- ½ tsp Vanilla Extract
- Frozen Berries (garnish)
- 2 tbsp Chocolate Nibs (garnish)
- 2-3 tbsp Almond Shavings (garnish)
Preparation
Step 1:
Place all the ingredients in a large bowl and mix until all the ingredients have combined. Cover and let it set in the fridge for at least 4 hours or overnight.
Step 2:
When ready to serve garnish with the chocolate nibs, berries and almond shavings.
Step 3:
