Lemon Coriander Soup
This clear, citrus-infused vegetable soup is perfect for the winter time. The lemon adds a tangy taste, while coriander gives a subtle hint of freshness to this warm and comforting soup.
A bowl of lemon coriander soup can help get rid of any cough or cold in the freezing cold or during the monsoon season. This soup is loaded with the goodness of vitamin C and will boost your body’s immunity against any nasty seasonal infection.
- Vegetable stock: 4 cups
- Finely chopped onions: 2 tbsp
- Lemon juice: 2 tbsp or to taste
- Chilli sauce: 2 tsp or to taste
- Salt: to taste
- Powdered black pepper: 1 tsp
- Coriander: 1 cup
- Water: 2 cups
Step 1 :
In a pot of hot water, add the chopped onions, lemon juice, salt, half of the coriander leaves and black pepper.
Step 2 :
Bring to a boil and let it simmer for a minute.
Step 3 :
Next, add 4 cups of vegetable stock into the pot. Then add the onions, carrots, garlic, mushrooms, tomatoes and peppercorns. Boil for 15 to 20 minutes.
Step 4 :
Sieve the soup into a serving bowl and garnish with the remaining coriander leaves. Serve hot for lunch or dinner.
