Lemon Coriander Soup

Easy Steps
01In a pot of hot water, add the chopped onions, lemon juice, salt, half of the coriander leaves and black pepper.
02Bring to a boil and let it simmer for a minute.
03Next, add 4 cups of vegetable stock into the pot. Then add the onions, carrots, garlic, mushrooms, tomatoes and peppercorns. Boil for 15 to 20 minutes.
04Sieve the soup into a serving bowl and garnish with the remaining coriander leaves.
- Vegetable stock: 4 cups
- Finely chopped onions: 2 tbsp
- Lemon juice: 2 tbsp or to taste
- Chilli sauce: 2 tsp or to taste
- Salt: to taste
- Powdered black pepper: 1 tsp
- Coriander: 1 cup
- Water: 2 cups
Serve hot for lunch or dinner.
