01Soak the chia seeds in water for 20 minutes. Wash all the vegetables properly and pat dry.
02Peel the beetroot and cut into small pieces.
03Next, dice the tomato and chop the coriander finely.
04Drain the chia seeds. Then, place all the ingredients in a food processor and blend.

- Coriander: 2 stalks
- Chia seeds: 1 tsp
- Lemon juice: 1 tsp
- Salt and pepper to taste
Pour the drink into tall glasses and serve chilled.
