- 1 cup pitted dates (about 10-12 dates)
- 1/2 cup pistachios (shelled)
- 1 cup dark chocolate chips (or chopped dark chocolate)
- 1/4 cup shredded coconut
- 1/4 teaspoon vanilla extract
- A pinch of sea salt (optional)
Easy Steps
01Soak the dates in warm water for about 10 minutes to soften them, then drain and remove the pits.
02In a food processor, blend the dates until they form a sticky paste.
03Roughly chop the pistachios and add them to the food processor with the date paste. Pulse a few times until combined. You can leave some pistachios in larger pieces for added texture.
04Take a heatproof bowl and melt the dark chocolate. You can do this in the microwave in 20-second intervals, stirring each time, or use a double boiler method on the stovetop.
05Line a small baking dish (about 8x8 inches) with parchment paper for easy removal.
06Spread the date-pistachio mixture evenly into the dish, pressing it down firmly to form a uniform layer.
07Sprinkle the shredded coconut on top of the mixture for extra texture and flavour.
08Pour the melted chocolate over the date-pistachio mixture, spreading it evenly with a spatula and sprinkle a pinch of sea salt on top for contrast.
09Place the dish in the refrigerator for at least 1-2 hours, or until the chocolate is fully set and firm.
10Once set, lift the bars from the dish using the parchment paper, and slice them into squares or bars.
