Easy Steps
01Wash 30 g (1 cup) drumstick leaves, 15 g (½ cup) curry leaves, 9 g (3) green chillies, and 10 g tamarind (lemon-sized ball).
02In a pan, dry roast 12 g (1 tbsp) urad dal and 12 g (1 tbsp) chana dal until golden brown. Remove and set aside.
03In the same pan, heat 10 g (2 tsp) oil. Sauté 12 g (4 cloves) garlic, 5 g (1-inch piece) ginger, green chillies, 4 g (2) dried red chillies, and curry leaves until aromatic.
04Add drumstick leaves and cook until wilted and the raw smell disappears.
05Transfer everything to a blender. Add roasted dals, tamarind, salt, and a splash of water. Grind to a thick chutney.
