Easy Steps
01Preheat the oven to 185°C. Line a loaf tin with parchment paper.
02In a bowl mash the bananas and jaggery together, till the texture of the mixture resembles a purée.
03Add in the oil and vanilla extract into the mixture and combine.
04Combine all dry ingredients – the whole wheat flour, cinnamon powder, baking powder, baking soda and salt – and sieve directly into the banana mixture. Fold the dry ingredients into the wet ingredients slowly till they are combined.
- Medium-sized overripe bananas: 4 (300g)
- Vegetable oil: 1/2 cup
- Powdered jaggery: 1/2 cup
- Vanilla extract: 1tsp
- Whole wheat flour: 1 and 1/2 cups
- Cinnamon powder: 1/4tsp
- Baking powder: 1 1/2tsp
- Baking soda: 1/2tsp
- Salt: 1 pinch
Pour batter into the loaf tin and bake for around 30 to 40 minutes until a toothpick inserted into the centre of the loaf comes out clean.
06Let bread cool in the pan for 10 minutes. Remove from the pan and slice.
07Serve the banana bread warm. You can store and refrigerate the rest in an airtight container for a few days.
