Easy Steps
01In a bowl, soak chia seeds in 3/4th cup of water and let them swell up for about 10-15 minutes.
02In another bowl, mix curd, grated carrot, grated cucumber, grated ginger, chopped chilli, honey, and salt.
03Once the chia seeds have swollen and formed a gel-like consistency, add them to the curd mixture and mix well.
04In a small pan, heat ghee. Add red chilli powder, curry leaves, peanuts, and a pinch of hing. Fry until peanuts are golden brown.
- 2 tbsp chia seeds (soaked in 3/4th cup of water)
- 3 tbsp yoghurt
- 2 tbsp grated carrot
- 2 tbsp grated cucumber (grated and drained)
- 1 tsp grated ginger
- 1 tsp chopped chilli
- 1 tsp honey
- Salt to taste
For Ghee Tadka
- 1 tsp ghee
- 1/3 tsp red chilli powder
- Curry leaves to taste
- 10 peanuts
- Pinch of hing
Pour the ghee tadka over the prepared curd rice chia pudding.
06Serve chilled and enjoy the refreshing goodness!
