Easy Steps

In a small bowl, whisk together tahini, lemon juice, maple syrup (or honey), and minced garlic.

Add a pinch of salt to taste.

Gradually whisk in water, one tablespoon at a time, until you achieve a creamy consistency.

Preheat the oven to 400°F (200°C).

  • 6 small beets
  • 4 small carrots
  • 1 cup watercress or arugula
  • 4 avocados, sliced
  • ¼ cup toasted pepitas
  • Microgreens
  • Sea salt
  • Freshly ground black pepper
  • Tahini dressing

Trim the tops off the beets and scrub them clean. Similarly, clean the carrots. Wrap the beets and carrots in aluminium foil.

Roast in the preheated oven for about 25-30 minutes until they are fork-tender.

Remove from the oven and let them cool. Peel the veggies then, slice the beets and carrots into bite-sized pieces.

On a large platter arrange the sliced beets and carrots over the greens.

Neatly place the sliced avocados on top of the salad.

Season with sea salt and freshly ground black pepper.
