Easy Steps
01Peel the mangoes and cut the flesh away from the seeds. Discard the seeds and add the mango flesh to a blender. Blend until you get a smooth mango puree.
02Transfer the mango puree to a large mixing bowl. Add the fresh cream and whisk until well combined and smooth.
03Add the soaked saffron (along with the milk), cardamom powder, and maple syrup to the mango-cream mixture. Mix well to incorporate all the flavours.
04Stir in half of the chopped pistachios, reserving the rest for garnish.
05Pour the mixture into a freezer-safe container. Cover and freeze for 5-6 hours or overnight, until the ice cream is fully set.
06When ready to serve, scoop the ice cream into bowls. Garnish with the remaining chopped pistachios and, if desired, some fresh mango cubes and a drizzle of maple syrup.
- 4 ripe mangoes
- 150 ml fresh cream
- 1.5 tbsp maple syrup (optional)
- A pinch of saffron threads (soaked in 1 tbsp warm milk)
- 1 tbsp chopped pistachios
- 1/2 tsp cardamom powder for extra flavour
