Easy Steps

Peel the mangoes and cut the flesh away from the seeds. Discard the seeds and add the mango flesh to a blender. Blend until you get a smooth mango puree.

Transfer the mango puree to a large mixing bowl. Add the fresh cream and whisk until well combined and smooth.

Add the soaked saffron (along with the milk), cardamom powder, and maple syrup to the mango-cream mixture. Mix well to incorporate all the flavours.

Stir in half of the chopped pistachios, reserving the rest for garnish.

Pour the mixture into a freezer-safe container. Cover and freeze for 5-6 hours or overnight, until the ice cream is fully set.

When ready to serve, scoop the ice cream into bowls. Garnish with the remaining chopped pistachios and, if desired, some fresh mango cubes and a drizzle of maple syrup.
