Easy Steps

Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, salt, and nutmeg.

Take a separate bowl to whisk together the melted olive oil, honey, eggs, Greek yoghurt, and vanilla extract until smooth and well combined.

Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix.

Gently fold in the grated carrots, chopped walnuts, and raisins.

Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.

Bake for 18-22 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.

Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
