Ingredients List
  • 1½ cups dried apricots
  • ½ cup raisins
  • ¼ cup raw almonds
  • ¼ cup walnuts
  • 3 tablespoons desiccated unsweetened coconut
  • 1 tablespoon flax seeds
  • ¼ cup dates (pitted)
  • ½ teaspoon cinnamon powder

Easy Steps

01

Chop the dried apricots and dates into smaller pieces to make blending easier. If your almonds or walnuts are not pre-chopped, roughly chop them.

02

In a food processor or blender, combine the dried apricots, raisins, almonds, walnuts, flaxseeds, dates, and cinnamon powder.

03

Pulse until the mixture begins to stick together. You may need to stop occasionally to scrape down the sides.

04

Once the mixture is well-combined, add the desiccated unsweetened coconut and pulse a few more times until everything is evenly mixed.

05

Scoop about a tablespoon of the mixture at a time and roll it into balls. If the mixture is too sticky, wet your hands lightly or refrigerate it for 10-15 minutes before rolling.

06

Place the energy balls on a tray lined with parchment paper. Refrigerate for at least 30 minutes to firm them up.

07

Store in an airtight container in the fridge for up to a week, or freeze for longer storage.
