- 2 boneless, skinless chicken breasts
- 2 tbsp pesto
- 4-6 cherry tomatoes, sliced
- 1/2 cup shredded mozzarella cheese
- 1/2 tsp dried oregano
- 2 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt & pepper to taste
- 2 tbsp grated Parmesan cheese
Easy Steps
01Using a sharp knife, carefully slice each breast horizontally to create a deep pocket, being careful not to cut all the way through.
02Open the chicken gently from the cut (slit)
03Inside each pocket, spread about 1 tablespoon of pesto.
04Layer in sliced cherry tomatoes and shredded mozzarella cheese.
05Sprinkle a pinch of dried oregano on top for that herby flavour.
06Gently press the chicken closed. You can secure the edges with toothpicks.
07In a small bowl, mix together the olive oil, paprika, garlic powder, salt, and pepper.
08Brush this seasoning mixture all over the top and sides of the stuffed chicken breasts. This adds flavour and helps create a nice golden crust. Now to cook, either use an air fryer or an oven.
Air Fryer Method
Preheat your air fryer to 200°C (390°F). Place the stuffed and seasoned chicken breasts into the air fryer basket. Make sure there’s space between them for air circulation. Cook for 5 minutes to start the browning. After 5 minutes, carefully open the air fryer, sprinkle grated Parmesan cheese over each breast, and cook for another 10–12 minutes, or until the chicken is fully cooked (internal temp should be 75°C or 165°F) and the cheese is melted and slightly crispy.
Oven-Baked Method
Preheat your oven to 200°C (390°F). Place the stuffed chicken breasts in a lightly greased baking dish. You can line it with parchment paper or foil for easier cleanup. Bake for 20 minutes uncovered. Remove from the oven, sprinkle the Parmesan cheese on top, and bake for an additional 8–10 minutes, until the top is golden and the chicken is cooked through. Optional: Turn on the broiler for the last 1–2 minutes for an extra crispy cheesy top — but watch closely!
