Easy Steps
01In a small pot, combine the sweetener, diced mango, water, and lemon juice. Mix well and cook over medium heat. Let it simmer for about 8 minutes until the liquids burst, and you have a syrup-like consistency with very soft fruit.
02Once done, transfer the mixture to a blender and blend until smooth. Set aside the mango coulis for later use.
03Carefully cut the silken tofu pack into 4 rectangles.
- 336 g silken tofu
- 2 tbsp sweetener
- 1 ripe mango or diced 250g
- 1 tbsp lemon juice
- ¼ cup water
- Fresh mint leaves
Place the individual servings of chilled tofu on small plates.
05Drizzle the prepared mango sauce over the tofu.
06Garnish with additional diced mango pieces and fresh mint leaves for added flavour and presentation.
