Spiced with the classic thandai spices like fennel and cardamom and garnished with saffron, this drink can be a hydrating and healthy accompaniment for your Holi festivities.

Easy Steps
01Take the almonds, pistachios and melon seeds in a bowl and soak for 6-8 hours. Take out the nuts and discard the water.
02Add half cup of water to the pre-soaked nuts, and grind till it turns into a smooth liquid. Add the remaining water and blend well.
03Take a tablespoon of the nut milk and soak the saffron. In a dry grinder, add all the spices and grind into a fine powder.
04Add the spices to the thandai liquid. Add the dates, rose water and a few ice cubes (optional), and blend together.
- 1/4 cup almonds
- 1/4 tbsp pistachios
- 3/4 tbsp melon seeds
- 2-3 dates soaked and deseeded
- 1 cup water
- 1/2 tsp fennel seeds (saunf)
- 1/2 tsp poppy seeds (khus khus)
- 3 whole black pepper kernels (kali mirch)
- 1 green cardamom
- 1 pinch saffron
- 1/2 tbsp rose water
Pour the thandai into glasses. Spoon the soaked saffron on top. Garnish with slivered almonds or pistachios.
