Easy Steps
01Preheat oven to 200°C
02Prepare a parchment paper by coating it with coconut oil.
03Lay another piece of parchment paper (about 3″ longer than your previous one) and dust with 1 tablespoon of cocoa powder. (You will invert the warm cake onto this once it’s done baking.)
04In a bowl, add cassava flour, cocoa powder and salt, stir to combine.

- Maple or Coconut Sugar (to be added as per taste)
- Cocoa Powder
- Cassava Flour
- Salt
- Lite Butter (as per requirement)
- Coconut Oil
- Eggs (as per requirement) and egg yolks
Add eggs, egg yolks and maple/coconut sugar in a mixer. Whip for about 2 minutes. Increase speed to high and whip for an additional 2-4 minutes.
06Remove the mixing bowl from the mixer and, using a fine strainer, sift dry ingredients on the top of the egg mixture, bit by bit folding carefully with a rubber spatula to combine before adding more.
07Return the bowl to stand and while mixing on low, pour the melted butter down the side of the bowl until combined. Remove the bowl from the stand, and fold slowly with a spatula to ensure all the butter is fully incorporated. Pour onto the prepared baking sheet and place in a preheated oven.
08Bake for 3 minutes. After carefully rotating the pan, bake for an additional 3-4 minutes or until the centre is spongy.

- You can use a 16¼” x 11½” sized baking sheet, which bakes up into a cake about 15″x10 ½”.
- Melt butter/ghee/ coconut oil first to cool slightly before using.
- Instead of maple sugar, you can also use coconut sugar for sweetening.
