Easy Steps
01Take parmesan cheese and add coriander powder, turmeric, red chilli powder, jeera, ginger-garlic paste, salt and coriander leaves (cilantro). Mix well and keep aside.
02Slice onion thin. Boil tomatoes, cool down and peel off the skin. Dice tomatoes finely.
03Cut globe eggplant half inch thick.
04In a pan heat oil, add sliced onion and saute for a min. Add ginger-garlic paste, diced tomatoes, coriander powder, red chilli powder, turmeric powder, salt , jeera and bay leaves. Cook well.

- Ginger-garlic paste - 1 tbsp
- Paremsan cheese - 100g
- Salt - As needed
- Coriander powder - 1 tbsp
- Red chilli powder - 1 tbsp
- Turmeric powder - 1 tbsp
- Cumin seeds (jeera) - 1 tbsp
- Bay leave - 1 nos
Mash everything lightly. In a skillet or oven-safe container, spread a ladle of the mashed content and add one slice of eggplant. Layer it with prepared parmesan cheese mixture. Continue layering in the same process till the brim.
06Bake at 425 degrees for 20 minutes.
07Cool down for 10 minutes and serve with roti or rice.
